When selecting a data source, you will see there are a few options.
Blank Value
From previous column
One-Off from Previous column
From product Extra fields
From Master data.
There are also some additional sources that only become available when selecting the specific data types Number, Decimal, Currency or Text.

Blank Value: This allows you to choose a data type but will not populate the field.
NOTE: Dropdown Data type allows you to create your own entries.
From previous column: This will populate the field with the data collected (if any) from the previous Audit.

One-Off from Previous column: This will populate the field with the data from the selected Product Extra field the first time, then will populate the field with data collected (if any) from the previous Audit.
NOTE: Dropdown Data type allows you to create your own entries.
From product Extra fields: This will populate the field with the data from the Product Extra fields table each time (Static value)
From master data: This will populate the field with the value from the product Master Data table
